Victor Churchill is set to expand into Melbourne after confirming plans to open a new steak restaurant at Crown Melbourne, marking the brand’s first venue in the city.

The restaurant will be located on level three of Crown Towers and is expected to open in mid-2027, subject to construction timelines. Building works are scheduled to begin in the second half of 2026, with the space designed to overlook the Yarra River and Melbourne’s city skyline.

The venue will combine a restaurant with an on-site butchery concept, drawing on the design language established at Victor Churchill’s flagship Woollahra location in Sydney. 

The brand has gained international recognition for blending traditional butchery with high-end retail and dining environments.

Victor Churchill CEO, Anthony Puharich, said: “Victor Churchill has always been about elevating butchery into an art form. Bringing this vision to Crown Melbourne is a dream.”

Puharich added: “We’re creating a space that’s bold and dramatic, as much about theatre, experience and design as it is about exceptional produce.”

The kitchen will be led by Australian chef Monty Koludrovic, who has been appointed as executive chef and culinary director for the project.  

Koludrovic is returning to Australia from Los Angeles, where he has worked across private members’ clubs and high-end restaurants. His career also includes roles in Sydney and London.

Koludrovic said: “I am so excited to return to Australia for this opportunity. Every detail will reflect our commitment to meticulous sourcing and provenance.”

Crown Melbourne CEO, Ed Domingo, said the restaurant would strengthen the resort’s dining offering. 

Domingo said: “This exciting new partnership brings together two icons of luxury and dining.”

The development comes as Crown Melbourne continues to invest in its non-gaming amenities, with dining, entertainment and premium hospitality playing a growing role in its long-term strategy.

Earlier this month, Crown Melbourne appointed Carter Bair as Chief Marketing Officer, tasking him with overseeing brand strategy, partnerships and the resort’s broader entertainment and hospitality portfolio.
